Ingredients for the Braised Short Ribs:
1 ½ pounds beef short ribs (bone-in)
Salt and black pepper, to taste
2 tablespoons all-purpose flour
Olive oil (for searing and sautéing)
1 small onion, diced
3 cloves garlic, minced
2 teaspoons Italian seasoning
1 ½ tablespoons tomato paste
½ cup red wine (optional)
1 cup warm beef broth
1 tablespoon chopped fresh flat-leaf parsley
¼ cup shaved or finely grated Parmesan cheese
Ingredients for the Garlic Crostini:
1 large French baguette, sliced into 16 slices
Olive oil (for drizzling)
2 whole garlic cloves
Prepare the Short Ribs: Season the short ribs generously with salt and pepper. Dust them lightly with flour. Heat a large skillet or Dutch oven over medium-high heat and add a tablespoon of olive oil. Sear the short ribs on all sides until browned. Remove and set aside.
Sauté the Vegetables: In the same skillet, add the diced onion and minced garlic. Sauté for about 2 minutes until softened and fragrant. Stir in the Italian seasoning and tomato paste, cooking for an additional 1-2 minutes.
Deglaze the Pan: If using red wine, pour it in now, scraping up any browned bits from the bottom of the pan. Let it cook for 2-3 minutes until reduced slightly. Add the warm beef broth and stir well.
Braised Cooking: Return the short ribs to the pot, ensuring they’re submerged in the liquid. Bring to a simmer, cover, and reduce the heat to low. Braise the ribs for 2 ½ to 3 hours, or until the meat is tender and falling off the bone.
Prepare the Garlic Crostini: While the short ribs are braising, preheat your oven to 375°F (190°C). Lay the baguette slices on a baking sheet, drizzle with olive oil, and toast in the oven for 5-7 minutes or until golden and crispy. Once toasted, rub each crostini with a whole garlic clove to infuse it with garlic flavor.
Finishing Touches: Once the short ribs are done, remove them from the pot and place them on a platter. Skim off any excess fat from the braising liquid and bring the liquid to a simmer to reduce slightly if needed. Spoon some of the sauce over the ribs and sprinkle with chopped parsley and Parmesan cheese.
Serve: Arrange the braised short ribs on a plate with the garlic crostini on the side for dipping. Serve immediately and enjoy!
