Surf and Turf : Filet Mignon with Grilled Shrimp & Lobster Sauce
Ingredients
For the Filet Mignon:
You’ll need two filet mignon steaks (6–8 oz each, about 1.5 to 2 inches thick). Use 1 tablespoon of olive oil, 2 tablespoons of unsalted butter, 2 smashed garlic cloves, and 2 sprigs of fresh rosemary or thyme. Season with salt and freshly ground black pepper.
For the Grilled Shrimp:
Use 6 large shrimp (16/20 count), peeled and deveined. You’ll need 1 tablespoon of olive oil, 1 teaspoon of smoked paprika, ½ teaspoon of garlic powder, and salt and pepper to taste.
For the Lobster Sauce:
You’ll need 1 tablespoon of butter, 1 small shallot (minced), 1 garlic clove (minced), ½ cup of lobster or seafood stock, ½ cup of heavy cream, 2 tablespoons of tomato paste, and 1 teaspoon of brandy or cognac (optional). For extra heat, add ¼ teaspoon of cayenne pepper (optional), and season with salt and white pepper to taste.
