Ingredients:
– 2 cups (250g) mixed berries (strawberries, blueberries, raspberries, or blackberries)
– 2 tbsp chia seeds
– 2-3 tbsp honey or maple syrup (adjust to taste)
– 1/2 tsp vanilla extract (optional)
– 1 tbsp lemon juice
Directions:
1. In a small saucepan over medium heat, add the mixed berries and cook for about 5 minutes, stirring occasionally, until they start to break down.
2. Mash the berries with a fork or potato masher to achieve your desired texture.
3. Stir in the chia seeds, honey (or maple syrup), vanilla extract, and lemon juice.
4. Reduce the heat to low and let it simmer for about 5-7 minutes until the mixture thickens.
5. Remove from heat and let it cool for about 10-15 minutes. The jam will continue to thicken as it cools.
6. Transfer to a clean jar and store in the refrigerator for up to a week. Enjoy on toast, pancakes, yogurt, or as a topping for desserts!
