Grilled BBQ Chicken & Creamy Macaroni Salad
Ingredients:
For the BBQ :
– 1/2 cup BBQ sauce
– 1 tbsp honey (optional, for extra glaze)
– 1/2 tsp garlic powder
– 1 tsp smoked paprika
– 1/2 tsp black pepper
– 1/2 tsp salt
For the Macaroni Salad:
– 1/2 cup mayonnaise
– 2 cups cooked macaroni
– 1/4 cup diced carrots
– 1 tbsp lemon juice
– 1/4 cup diced bell peppers (any color)
– 2 green onions, chopped
– 1/2 cup diced tomatoes
– 1 tbsp Dijon mustard
Instructions:
1. Start by marinating the chicken drumsticks. In a mixing bowl, combine the BBQ sauce, honey (if using), smoked paprika, garlic powder, black pepper, and salt. Stir until the ingredients are well mixed.
2. Add the drumsticks to the marinade and ensure they are fully coated. For best flavor, let them marinate in the refrigerator for at least 30 minutes, or up to overnight if you have time.
3. While the chicken is marinating, prepare the creamy macaroni salad. In another bowl, blend together the mayonnaise, Dijon mustard, and lemon juice. Mix until smooth.
4. Stir in the cooked macaroni, diced tomatoes, bell peppers, carrots, and chopped green onions into the mayonnaise mixture. Season with a pinch of salt and pepper to taste. Gently mix until all ingredients are incorporated.
