Ingredients:1. 13 to 15 graham crackers (about 1 ½ sleeves)
2. 1 ¼ cups unsalted butter (2 ½ sticks)
3. 1 ¼ cups dark brown sugar
4. 1 teaspoon vanilla extract
5. 1 teaspoon kosher salt or sea salt
6. 10 ounces semi-sweet chocolate chips (about 2 cups)
7. ⅔ cup Heath toffee bits or other toppings
Directions:
Preheat Oven:
1.1. Line a jelly roll pan (10 x 15 inches) with nonstick foil or parchment paper. You can also use a silicone baking mat. Preheat the oven to 350°F.
Prepare the Crackers:
2.1. Place the graham crackers in a single layer on the jelly roll pan. It’s okay if there’s a little space left over. Set aside.
Make the Toffee:
3.1. In a 3-quart heavy-bottomed saucepan, melt the brown sugar and butter together over medium-high heat, stirring frequently.
3.2. Bring the mixture to a boil and let it boil for 3 minutes, stirring almost continuously. (If you have a candy thermometer, aim for 270°F-290°F.)
Add Flavor:
4.1. Remove the saucepan from heat and stir in the vanilla extract and salt.
Pour the Mixture:
5.1. Pour the toffee mixture over the graham crackers, spreading it evenly with an offset spatula if needed.
Bake:
6.1. Place the pan in the oven and bake for 5 to 7 minutes. The mixture should be bubbling vigorously when you take it out. (If using a candy thermometer, look for 300°F-310°F.)
Add Chocolate:
7.1. Remove the pan from the oven and immediately sprinkle the chocolate chips over the top.

Cool and Serve:
9.1. Let the toffee cool at room temperature until completely set, or chill in the fridge for at least 2 hours.
9.2. Once set, use your hands to “crack” it or cut it into squares with a knife.
