Buttery Steak Bites and Eggs
!
Ingredients:
1 lb steak (such as sirloin or ribeye), cut into bite-sized pieces
Salt and pepper, to taste
2 tbsp butter
2 cloves garlic, minced
1 tsp fresh thyme, chopped (optional)
4 large eggs
1 tbsp olive oil or additional butter for eggs
Instructions:
Season steak bites with salt and pepper.
Heat 1 tablespoon of butter in a large skillet over medium-high heat. Add the steak bites in a single layer, searing for 2-3 minutes per side until browned. Remove from the skillet and set aside.
Add the remaining tablespoon of butter to the skillet. Sauté garlic and thyme (if using) for 30 seconds until fragrant. Return steak bites to the skillet, tossing to coat in the garlic butter. Remove from heat and set aside.
In a separate pan, heat olive oil or butter over medium heat. Crack the eggs into the pan and cook them to your desired doneness (sunny-side-up, over-easy, etc.).
Serve the steak bites alongside the eggs, and enjoy!
Notes:
For extra flavor, add a dash of hot sauce or a sprinkle of fresh herbs on the eggs.
Pair with toast or hash browns for a more complete meal.
