Luxurious Pistachio Cheesecake Domes with Raspberry Heart & Glossy Green Glaze
Ingredients
For the Pistachio Cheesecake
200 g cream cheese, softened
½ cup heavy cream
⅓ cup powdered sugar
½ cup pistachio paste (pure pistachio, unsweetened)
1 tsp vanilla extract
1 tsp agar-agar powder (halal alternative to gelatin)
2 tbsp water
For the Raspberry Heart
1 cup fresh or frozen raspberries
2 tbsp sugar
1 tsp lemon juice
½ tsp agar-agar powder
1 tbsp water
For the Glossy Green Glaze
½ cup white chocolate, finely chopped
¼ cup sweetened condensed milk
⅓ cup water
1 tsp agar-agar powder
Green food coloring (gel-based)
For Garnish (Optional)
Chopped pistachios
Fresh raspberries
Edible gold leaf
Directions
Prepare Raspberry Heart:
Cook raspberries, sugar, and lemon juice over medium heat until soft. Blend smooth.
Dissolve agar-agar in water, add to raspberry purée, simmer 1 minute.
Pour into small silicone half-sphere molds and freeze until firm.
Prepare Pistachio Cheesecake:
Heat water with agar-agar until fully dissolved.
Whip cream to soft peaks. In another bowl, mix cream cheese, powdered sugar, pistachio paste, and vanilla until smooth.
Add warm agar mixture, then gently fold in whipped cream.
Assemble Domes:
Fill larger silicone dome molds halfway with pistachio cheesecake.
Insert frozen raspberry heart, cover with more cheesecake, smooth tops.
Freeze for 4–6 hours until completely firm.
Prepare Glossy Green Glaze:
Heat water with agar-agar until dissolved. Add condensed milk, then pour over chopped white chocolate.
Blend until smooth and glossy. Add green food coloring.
Glaze & Finish:
Unmold frozen domes and place on a rack.
Pour glaze evenly over domes.
Garnish with pistachios, raspberries, or gold leaf. Chill 30 minutes before serving.
