Oversized Peach Cobbler Cheesecake Donuts with Vanilla Glaze
Ingredients:
2 cups all-purpose flour
1 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
2 large eggs
3/4 cup milk
1/4 cup unsalted butter, melted
1 teaspoon vanilla extract
1 cup cream cheese, softened
1/2 cup powdered sugar (for cheesecake filling)
1/4 cup heavy cream (for cheesecake filling)
2 large peaches, peeled and sliced
1/4 cup brown sugar (for peach topping)
1 tablespoon butter (for peach topping)
1 tablespoon cinnamon (for peach topping)
1/2 cup powdered sugar (for dusting)
Directions:
Preheat the oven to 375Β°F (190Β°C). Grease a donut pan or line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
In a separate bowl, whisk the eggs, milk, melted butter, and vanilla extract.
Add the wet ingredients to the dry ingredients and mix until just combined. Be careful not to overmix.
Spoon the batter into the donut pan, filling each cavity about halfway.
Bake for 10-12 minutes or until the donuts are golden brown and a toothpick inserted comes out clean.
While the donuts are cooling, prepare the cheesecake filling. In a medium bowl, whisk together the softened cream cheese, powdered sugar, and heavy cream until smooth and creamy.
Once the donuts are fully cooled, use a piping bag or spoon to fill the center of each donut with the cheesecake filling.
For the peach topping, melt the butter in a skillet over medium heat. Add the peach slices, brown sugar, and cinnamon. Cook for 4-5 minutes until the peaches are tender and the syrup is thickened.
Top each donut with a spoonful of the cinnamon-syrup peaches and dust with powdered sugar.
