Thai Meatballs with Peanut Satay Dipping Sauce

Ingredients:
For the Meatballs:
500g (1 lb) ground chicken or turkey
2 garlic cloves, minced
1 tbsp fresh ginger, grated
2 green onions, finely chopped
1 tbsp fish sauce
1 tbsp soy sauce
1 tsp red curry paste
1 tsp sesame oil
1 egg
1/4 cup breadcrumbs
Salt and pepper to taste
For the Peanut Satay Sauce:
1/2 cup creamy peanut butter
2 tbsp soy sauce
1 tbsp lime juice
1 tbsp honey or brown sugar
1 tbsp red curry paste
1/2 cup coconut milk
Water to thin if needed
Directions:
Preheat oven to 200°C (400°F). Line a baking tray with parchment paper.
In a large bowl, mix all meatball ingredients until well combined. Form into 1-inch balls and place on the tray.
Bake for 18–20 minutes or until golden and cooked through.
While the meatballs bake, combine all peanut satay sauce ingredients in a saucepan. Cook over medium-low heat, stirring constantly until smooth and heated through. Add water to thin to desired consistency.
Serve the meatballs warm with a bowl of the peanut sauce for dipping. Garnish with chopped peanuts and fresh cilantro if desired.
