Magic Lemon Cobbler
- Magic Lemon Cobbler

Ingredients:
1 cup granulated sugar
1 cup milk
1/2 cup (1 stick) unsalted butter, melted
1 tbsp lemon zest (from about 1 lemon)
1/4 cup fresh lemon juice
1 cup all-purpose flour
1 tsp baking powder
1/4 tsp salt
1/2 tsp vanilla extract
Powdered sugar, for garnish (optional)
Preparation:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease or butter a 9×9-inch baking dish or similar-sized casserole dish.
Mix the Wet Ingredients:
In a large mixing bowl, combine the granulated sugar, milk, melted butter, lemon zest, lemon juice, and vanilla extract. Whisk until fully combined.
Add Dry Ingredients:
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until smooth and combined. The batter will be quite thin, which is normal.
Bake the Cobbler:
Pour the batter into the prepared baking dish. Do not stir; it may seem runny, but that’s okay!
Bake for 40-45 minutes, or until the top is golden brown and the center is bubbly and set. The cobbler will have a cake-like top with a lemony, custard-like sauce underneath.
Serve:
Allow the cobbler to cool slightly before serving. You can sprinkle powdered sugar over the top for an extra touch of sweetness.
Serve warm with a scoop of vanilla ice cream or whipped cream if desired.
Enjoy your delightful Magic Lemon Cobbler! It’s a sweet, tart, and comforting dessert that’s incredibly easy to make.
