**Yields:** 2 servings
**Prep time:** 10 minutes
**Cook time:** 15 minutes
**Ingredients:**
2 (1-1.5 lb) live lobsters (or 2 pre-cooked lobster tails, for easier preparation)
* 4 tablespoons unsalted butter
* 4 cloves garlic, minced
* 2 tablespoons chopped fresh parsley
* 1 tablespoon lemon juice
* Salt and freshly ground black pepper to taste
* 2 tablespoons olive oil
**Instructions:**
**Prepare the Lobster:** If using live lobsters, ask your fishmonger to steam them for you or follow instructions on how to humanely kill and steam them at home. If using pre-cooked tails, skip to step 3.
2. **Steam the Lobster (if using live):** Place lobsters in a steamer basket over boiling water. Cover and steam for 8-10 minutes, or until bright red and cooked through. Let cool slightly.
3. **Prepare the Garlic Butter:** In a small saucepan, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute, or until fragrant (be careful not to burn the garlic!).
4. **Combine & Serve:** Remove the lobster meat from the shells. Cut the meat into bite-sized pieces. Add the lobster meat to the garlic butter sauce. Stir in the parsley and lemon juice. Season with salt and pepper to taste.
5. **Optional:** For extra flavor and a little healthy fat, gently sauté the lobster meat in the olive oil for a few minutes before adding it to the garlic butter sauce. This step is best for pre-cooked lobster tails and helps give a nice sear to the meat.
6. **Serve immediately** over rice, pasta, or simpEnjoy this simple yet
