Ingredients:
1 lb ground beef
2 cups Brussels sprouts, halved
2 tbsp sesame oil
1/4 cup soy sauce
2 tbsp honey
1 tsp grated ginger
2 cloves garlic, minced
1 tsp cornstarch (mixed with 2 tsp water for slurry) 2 cups cooked rice
1 tbsp sesame seeds for garnish 2- green onions, sliced
Directions:
Prepare the Brussels Sprouts: Preheat your oven to 425°F (220°C). Toss the halved Brussels sprouts with 1 tbsp sesame oil, a pinch of salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until crispy and golden.
Cook the Beef: In a large skillet over medium heat, heat the remaining sesame oil. Add the ground beef, breaking it into crumbles as it cooks, until browned and fully cooked. Drain excess fat if needed.
Make the Teriyaki Sauce: In a small bowl, whisk together soy sauce, honey, ginger, garlic, and the cornstarch slurry. Pour the mixture into the skillet with the beef. Stir and let it simmer for 3-4 minutes until the sauce thickens and coats the beef.
Assemble the Bowls: Divide the cooked rice into bowls. Top with teriyaki beef and roasted Brussels sprouts. Sprinkle with sesame seeds and sliced green onions for garnish.
